Proper date marking of ready to eat foods. Very clean, spacious, and organized kitchen. Dishmachine and wiping buckets sanitizing properly. Excellent hot holding and cold holding temperatures. Employees were observed wearing and changing gloves and washing their hands when necessary. Also, all key staff are ServSafe certified. Discussion about new food code, cutting boards, and pest control efforts have been very effective since last inspection (no flies). Keep up the great work! Pest control company to be contacted about flies, since bar garage doors are now open. Also, all key staff are ServSafe certified. Discussion about handsinks for handwashing only, date mark system revisit on some products and labeling spray bottles. Also, placement and handling of sliced steak to be worked on for prep units. Manager knowledgeable on food safety risk factors and employee health. Employees observed washing hands and wearing and changing gloves during inspection (Kay & Natasha observed with very good hygienic practices). All foods are code dated as required. Pre-opening inspection conducted and observed the following: Manager knowledgeable on food safety risk factors and employee health. All refrigeration equipment will hold foods at proper temperatures and in proper working order. Hand sinks had tempering valves installed to maintain temperature of at least 110 F. Manager has food safety program for all employees and required to provide signed document to keep on file for employee health. Local Fire Marshalls office and Building officials have approved fire suppression system and issued occupancy permit. Food permit will be issued at this time. The following observations were made during today's pre-opening inspection: - Hot water heater - 100 gallon / 227/gal hr quick recovery - Built-in concrete/tile mop sink - Back flow prevention devices on equipment sinks/ beverage dispensers - 4 hand sinks strategically located throughout food preparation area - Air gaps on all drains observed on plumbing - All floors and coving tightly sealed with ceramic tile - Air curtains placed on openings to prevent entrance of insects and rodents - RFP placed and sealed on all walls in food prep area - Stainless steel place on walls behind ventilation hood and food cooking equipment Request the following be available for permit to be issued: - Approval from Fire Marshall office - Approval form local City/County Building Officials - Occupancy permit from officials - No violation noted during this evaluation. | 09/25/2013 | Pre-Opening |
