No food preparation observed during the inspection but green beans were observed reheating on the stove upon arrival. The lunch menu for today is baked chicken (purchased cooked from the local grocery store and served hot), green beans, and potato salad. All foods are purchased precooked and then reheated in the stove or oven when needed. All plates, cups, and utensils are disposable. Only the cooking equipment, food storage containers, and serving utensils are cleaned and sanitized in the 3 compartment sink using a chlorine sanitizing solution. Observed chlorine sanitizer in the wiping cloth bucket at a concentration of 100 ppm. Observed the overall facility very clean.

Observed sanitizer solution level for sanitizing food contact surfaces above 200 ppm. Recommend sanitizer level be at 50-200 ppm chlorine. CORRECTED level less than 200 ppm. 50 adults enrolled in program. Food thawed in refrigerators. Use mainly frozen foods, heat in oven. Also use canned foods. Food not being served at time of inspection. Menu today was submarine sandwiches prepared by an offsite food establishment. No food reheated, additional served to staff or discarded. No cold holding foods for use at time of inspection. Frozen foods heat/bake-service then discard leftovers. Reviewed signs/symptoms and diseases for Employee Health policy.
