Food suppliers are walmart and BJs. All proteins recieved pre-cooked. Single service items used for service. Discussed handwashing and glove use. Observed overall clean facility.
  • Person in Charge
    Observation: Observed no means to verify food employees are informed of their responsibility to report to their PIC information concerning their health and activities as they relate to diseases transmitted through food.
    Correction: PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food. EHSS provided form 1B.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The person in charge could not provide a functioning food temperature measuring device.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chlorine being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940. Observed at a concentration greater than 200ppm.
    Correction: Utilize only chlorine sanitizer that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces, between 50-100ppm.

Food supplier is Sysco. All foods are received precooked. Disposable silverware and dishes are used. Discussed setting up 3 basin sink to clean and sanitize all cooking utensils/dishes. Discussed employee health, EHS provided PIC with Form 1B for additional resource. Overall clean facility.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) Macaroni and Cheese, Hot Dogs, and Meat Ball Sauce in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: According to the ""consume by"" date on the commercially processed ready-to-eat (RTE) Bologna (4/12), Gravy (4/21), and Macaroni Salad (4/10) in the refrigerator, the food should have been discarded 4 to 15 days ago.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

No food preparation observed during the inspection but green beans were observed reheating on the stove upon arrival. The lunch menu for today is baked chicken (purchased cooked from the local grocery store and served hot), green beans, and potato salad. All foods are purchased precooked and then reheated in the stove or oven when needed. All plates, cups, and utensils are disposable. Only the cooking equipment, food storage containers, and serving utensils are cleaned and sanitized in the 3 compartment sink using a chlorine sanitizing solution. Observed chlorine sanitizer in the wiping cloth bucket at a concentration of 100 ppm.
Observed the overall facility very clean.

    Observation: The person in charge could not provide a food temperature measuring device that was in working condition.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
  • Equipment - Cooking and Baking Equipment
    Observation: The cavity of the microwave oven is observed soiled.
    Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.

Observed sanitizer solution level for sanitizing food contact surfaces above 200 ppm. Recommend sanitizer level be at 50-200 ppm chlorine. CORRECTED level less than 200 ppm. 50 adults enrolled in program. Food thawed in refrigerators. Use mainly frozen foods, heat in oven. Also use canned foods. Food not being served at time of inspection. Menu today was submarine sandwiches prepared by an offsite food establishment. No food reheated, additional served to staff or discarded. No cold holding foods for use at time of inspection. Frozen foods heat/bake-service then discard leftovers. Reviewed signs/symptoms and diseases for Employee Health policy.
No violation noted during this evaluation.
