Observed mouse droppings under dry storage room shelving and live roach on floor - pest control services are needed.
Discussed additions to cleaning schedule (near diffusers on ceiling, cobweb control).

No out of compliance risk factors observed during this inspection. Observed three thermometers in ice water that read 25°F, 40°F, 30°F calibrate thermometers to 32°F +/- 2°F or discard.
Note: Manager not on duty today - staff were able to locate employee health policy - great!

Reviewed records - please be sure to record temperatures for each menu item (example tuna salad, steamed corn)
A drip was observed in the walk in cooler - a work order was put in by PIC - please relocate food as needed until this is resolved.

    Observation: A can of oven cleaner is stored above clean disposable items.
    Correction: Store chemicals below and away from food. This item was corrected immediately when brought to PIC's attention.

Contact EHS for a follow-up when this items has been resolved - target time 10 days or less. Good glove use habits observed today - great! Reviewed reheating for hot holding with staff.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: The chemical sanitizer dispensed by the dishmachine is greater than 200 ppm (test strip is turning black).
    Correction: Discontinue use of the machine until it has been repaired or adjusted as needed to provide 50-100 ppm chlorine for sanitizing - corrected during inspection - PIC is instructing staff to sanitize items in the three vat sink until the machine is repaired or adjusted.

    Observation: Open drink container improperly stored.
    Correction: Instruct food service workers to drink only form closed containers such as a cup with a lid and straw, handled and located to prevent contamination of hands, food and clean equipment.
