Observed disposable food containers that have been washed and stored for re-use. Discard/recycle food containers when the food obtained in them is gone - obtain multi use food grade containers. Please attend training - kitchen staff not able to describe use of test strips or hot holding temperature.

    Correction: Instruct staff to drink only from closed containers such as a cup with a lid and straw, handled and located to prevent contamination of hands, food and clean equipment.

    Observation: Bug spray stored next to disposable water cups.
    Correction: Remove this item. Store chemicals below and away from food and food contact surfaces.

Maintain the corrected item as corrected. Discussed using 3 vat sink for food prep - this is correct if 1. only used for one task at a time (prep or warewashing) 2. wash, rinse & sanitize the sink when switching in between prep and warewashing. Please call or email if any questions.
