All food temperatures taken were internal. Two refrigeration units are not being used at the time, but were plugged in for this inspection and the ambient air temperatures are 38*F for the reach in and 38*F for the make table. This mobile unit was not in service at the time of the inspection.
Cooling Methods Observation: The methods used for cooling were not adequate. The rice that undergoes hot holding during service is cooled down after service and placed in a deep pan in refrigerator with the lid on. The rice was 80*F after 1 hr of cooling. Ensure rice cools to 70*F within two hours after it reaches 135*F and then cools to 41*F with an additional 4 hrs, totaling a 6 hour cooling time.
Correction: If rice does not reach 70*F within 2 hrs of cooling reheat and properly cool. Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

All food temperatures taken were internal. The mobile unit is clean and maintained. Ventilation fan is broken- repair. 2015 Permit Issued.
Temperature - Food Temperature Measuring Devices - Provided Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets. A digital thermometer is recommended.

Routine
No foods on mobile unit. Water was provided in each unit to take a temperature of. This inspection is an opening/routine inspection. The unit will be reinspected in one month when in operation. An interim permit has been issued and will expire on July 8, 2015. All outstanding violations must be corrected in order to receive permit. Notes: Post certified food manager certificate and permit in public view. Have soap, paper towels and handwash signage at the handsink. Have test strips for sanitizer. Have a digital thermometer. Have thermometers located in the front of each refrigeration unit. Place trash can by handsink.
Drainboards Observation: There are no drainboards. The operator stated that racks will be hung above the three compartment sink.
Correction: Provide additional drainboards/utensils racks/tables so that all cleaned and soiled utensils and equipment can be properly stored as they accumulate during operation.
