Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: The homestyle refrigerator is cold holding at improper temperatures of 44*F. No foods were in the refrigerator except for water.
Correction: Ensure refrigerator is cold holding foods at 41*F or lower. The unit may need its thermostat adjusted or servicing. Ensure refrigerator is properly cold holding foods before your next catered event. Call the inspector once it is repaired.
Good Repair and Calibration of Thermometers (repeated violation) Observation: Observed food thermometer in refrigerator is not accurate.
Correction: Obtain a new thermometer.
Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site) Observation: A container of fungicide was in the refrigerator. The container had milk and water in it for plants.
Correction: Do not reuse chemical bottles and place in refrigerator. Use a new bottle and label milk and water for plants.

Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Sanitizing Solutions, Testing Devices (repeated violation) Observation: Improper (swimming pool) test kit provided.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Critical: Toxics - Identifying Toxic Containers* (corrected on site) Observation: Chemical spray bottle observed without a label.
Correction: Label spray bottles with contents or discard.

Kitchen is provided for caterer use during events at museum. Kitchen not in use at time of evaluation. Currently, no phfs stored in refrigerator--only staff personal food. Advised person in charge to adjust setting and replace thermometer.
Sanitizing Solutions, Testing Devices Observation: Swimming pool test strips provided.
Correction: Provide restaurant chlorine test strips.
Good Repair and Calibration of Thermometers Observation: Thermometer in refrigerator door reading 30* while ambient air measured at 47*.
Correction: Provide accurate thermometer and adjust the thermostat so it is cold holding at or below 41*F.

Kitchen is provided for caterers. Caterers have access to ovens, microwave, and refrigerator. Kitchen has limited cooking capabilities. Provide chlorine test strips and digital food thermometer and chlorine bleach as sanitizer.
Non-Food Contact Surfaces Observation: Several drawers and at least one shelf inside the cabinetry are not clean.
Correction: Clean.
