    Observation: Hot dogs in sandwich unit at 46 F need to be 41 F or below. not to be used check sandwich unit make sure it gets to 41 F.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (repeated violation)
    Observation: noted some containers on shelf dirty and not completely clean. greasy feel.
    Correction: Clean and sanitize these surfaces for food contact.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: repair metal floor of the walk in , it buckles & squishes and is concave. Needs to be make water tight and floor reinforced.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: noted one live baby roach near handwash facility nned to get pest control maybe twice per month instead of once per month.
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.

    Observation: Noted 2 metal pans stored on top of each other wet. The bottom of pas was touching food contact surface of the 2nd pan with food particles on it (flour ??) .
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Noted a) wall of 3 comp sink in need of cleaning b) handles of hand sink had flour build up (cleaned during inspection) . c) door on walk in freezer has brown material on it please clean.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: a) Noted floor in dry goods store room leaking water on floor from the door and floor juncture. b) Noted ceiling leak in walk in fridge dripping on to the floor wet water may be coming in from the side wall. repair.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
