Observation: Noted door to walk in freezer does not close properly.
Correction: Repair the door to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the door, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Observation: Towel dispenser not working in kitchen repair. towels brought in as a temporary fix.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Noted handsink in kitchen in need of cleaning. Flour build up . Clean handle also of the faucet.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Saw temp chars for 04/13/2013 cook temp on chart for original recipe listed as 179. Appears grilled chicken and crispy chicken temps not taken. K FC daily food standard record. Observation: Physical structure is not maintained in good repair. A) Noted wall behind pots and pans storage rack worn. Need to be repaired/painted with semi gloss. Needs to be smooth non absorbent and easily cleanable. b) Some grouting on the floor next to chicken perp station worn re grout, gaps seen in-between tiles. c) some cracked wall tiles next to mop sink and next to hand sink.
