Critical: Hands - Preventing Contamination from Hands* (corrected on site) Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.Sever was seen slicing lemons for beverages with bare hands
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site) Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: slicer and meat grinder attachment .
Correction: Clean and sanitize these surfaces for food contact.

Routine
Quat sanitizer concentration in wiping cloth buckets measured at 300 ppm. Salmon delivered fresh by Performance Food Group Inc in Lebanon, TN and packaged by Alimentos Multiexport is farm raised and fed formulated feed according to stickers on the packaging. According to the menu Salmon may be ordered cooked to customer's preference.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Some foods in top of the prep cooler across from the grills were at improper temperatures.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site) Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 172ºF.
Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site) Observation: Quaternary Ammonium sanitizing solution used in the 3-compartment sink at the bar was not at an acceptable concentration.
Correction: Adjust the sanitizing solution to 150-400 parts per million as identified by manufacturer's recommendations.
