Main supplier is Ferraro Foods. Pasta and spaghetti sauces are normally cooked daily and not held over for next day service. Mussels and clams are pre-cooked, frozen. Scallops are received frozen/raw. No scallops in facility at time of inspection. Most foods are held frozen and thawed in small quantities for daily service. Discussed cooking of steaks and hamburgers. Owner stated that both are cooked to 160 degrees and will not be served rare or undercooked. EHSS requested that owner check with supplier as to whether the steaks are whole muscle or pinned or injected. Recommend checking dishmachine sanitizer every morning prior to using dishmachine. Machine was not in use at the time of the inspection and sanitizer was low. A new bottle of sanitizer was installed and the pump primed and sanitizer was meeting required levels. Discussed washing of fruits and vegetables.
