No proteins cooked in facility. Deli meat sliced in facility. Discussed date marking deli meat rolls once sliced. Chicken for salad fully cooked. EHSS will research mineral oil used for cutting board. Breads are bagged and labelled once cut. New cutting boards are in place. Produce including lettuce and tomatoes are pre-chilled. Reviewed bread labels.

    Observation: Muffins and scones on display for consumer purchase are not protected from contamination. Breads are bagged once cooled after baking.
    Correction: Protect food from miscellaneous sources of contamination. Recommend covering items on display.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Observed butter on counter for softening for bread making and butter spreads for sampling not cold holding at 41 or below or on time control plan. Butter samples had been on counter since 6 a.m. Observed milk in front display case not cold holding at 41 degrees or below.
    Correction: Recommend discarding the butter spreads used for sampling and relocte butter for bread making in reach in cooler to ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Recommend

EHSS recommended the following:
- that bakery items on display be covered
- cutting board on True sandwich prep unit be repaired or replaced, cutting board is heavily scored
- storing tuna and chicken salad, meats, cheese and cut tomatoes in bottom of True sandwich prep unit overnight
- softening butter in microwave until EHSS researches baking process of softening butter overnight on the counter
- all equipment and boxes are stored 6 " off floor
- recommend including nuts as ingredient for chicken salad in display cabinet
Breads are set aside at end of the day for donation to local church. Meats and cheese are sliced in house. Tuna and chicken salad held over for 3 days. Discussed ambient air cooling. Vegetables are washed in prep since. Quiche made with liquid pasteurized eggs.
Discussed employee health. Form 1 B signed by employees.

Reminder to check canned goods for dents. Monitor temps of water at 3 vat sink. Recommend turning hot water up if not reaching 120 or greater throughout the day. Bread donated to local churches after 24 hour period. good use of hand washing, glove use and date marking.

    Observation: Honey stand was observed in a condition that prevents necessary maintenance and easy cleaning.
    Correction: Equipment needs to be sealed to prevent the possibility of contamination.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the prep cooler are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

    Observation: Sliced tomatoes - 47'F - cold holding at improper temperatures in Sandwich Prep (SP) Unit. PIC voluntarily discarded tomatoes.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: can opener blade, slicer. Person in Charge cleaned equipment.
    Correction: Clean and sanitize these surfaces for food contact.
  • Critical: Toxics - Identifying Toxic Containers* (corrected on site)
    Observation: Chemical spray bottle observed without a label. PIC labeled spray chemical bottles.
    Correction: Label spray bottles with contents or discard.

    Correction: Recommend discarding the food and ensuring that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Food discarded by PIC.
  • Sanitizing Solutions, Testing Devices
    Observation: Observed no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Recommend obtaining a quat sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
