EHSS recommended the following: - that bakery items on display be covered - cutting board on True sandwich prep unit be repaired or replaced, cutting board is heavily scored - storing tuna and chicken salad, meats, cheese and cut tomatoes in bottom of True sandwich prep unit overnight - softening butter in microwave until EHSS researches baking process of softening butter overnight on the counter - all equipment and boxes are stored 6 " off floor - recommend including nuts as ingredient for chicken salad in display cabinet Breads are set aside at end of the day for donation to local church. Meats and cheese are sliced in house. Tuna and chicken salad held over for 3 days. Discussed ambient air cooling. Vegetables are washed in prep since. Quiche made with liquid pasteurized eggs.
