A report was received that stated that multiple students and staff have been ill with suspected Norovirus in this facility. EHS provided a copy of VDH Norovirus Prevention Guidance booklet to Director and discussed time frames for excluding ill staff. Use of sodium hypochlorite (household bleach) in cleaning was discussed. Kitchen staff have not been out recently with GI symptoms and were aware of employee health policy.

No violation noted during this evaluation.

Old sanitizer dispenser not working - remove or repair. Provide/locate test strips for sanitizer (chlorine).
Reminders for date marking - mark the date on RTE PHF/TCS foods to indicate a maximum seven day holding period -> applies to food opened in or prepared in the establishment.
For example a food made today March 31 can be marked

Tuesday - day of prep
Monday - day of discard
All staff & foods must be marked/using the same system.

    Observation: Items being cleaned are not being sanitized - the dispensing system does not appear to be working.
    Correction: Discontinue use of the sanitizer dispensing system until it has been repaired or adjusted to provide sanitizer in accordance with the package labeling. Sanitize wares before use after cleaning (50-100 ppm chlorine OK).

Maintain the corrected item as corrected. Reviewed employee health with PIC. Observed paper towels stored in a disposable tray due to lack of key to dispenser - provide kitchen staff with a key.

    Observation: Food service workers observed lathering for less than 10 seconds as part of the handwashing process.
    Correction: Instruct all food service workers to later for 10 seconds after applying soap to their wet hands prior to rinsing.

Vent hood filters observe in a dusty condition - please clean and increase the regular cleaning frequency. Reminder - store staff food below and away from student food.

    Observation: Wares are not being sanitized - solution is less than 200 ppm quat as required by the manufacturer.
    Correction: Provide chlorine sanitizer at 50-100 ppm or quaternary ammonium at the concentration specified by the manufacturer for sanitizing.

New storage containers do not appear to be food grade plastic - use for storage of packaged items or obtain food grade containers.
Discussed cleaning schedule of ice machine.
Overall cleanliness of kitchen has greatly improved - thank you.

    Observation: The quaternary ammonium sanitizer is not being used in compliance with 40 CFR 180.940.
    Correction: Use only sanitizers that are not compliant with 40 CFR 180.940.
