Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site) (repeated violation) Observation: The prepared ready-to-eat (RTE) humus and soup in the refrigeration unit is not properly dated for disposition. Said food were prepared and would be held more than 24 hour
Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Operator voluntarily put the date marks on said food items.

Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: PHF cold holding at improper temperatures in that Cheese, bbq pork, sliced tomatoes, marinated chicken and chicken wings were registered at a range of 50-55 degrees F in two door low boy refrigerator (next to the walk in refrigerator) and 3 door low boy refrigerator infront of the deep fryer. Said units were registered at 50 degrees.
Correction: Operator relocated the PHF to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

As per the operator said humus were portioned in small containers and left on food prep table for about and hour prior to placing them in walk in refrigerator
