  • Jewelry - Prohibition (corrected on site)
    Observation: One of the employees working in the kitchen area had both a plain wedding band, and also an engagement ring, with a stone in it, on her fingers.
    Correction: The only ring that may be worn on the fingers, while working in the kitchen areas, is one plain wedding band. No rings with stones, or rough surfaces, are allowed on the fingers, while working in the kitchen. This is true, even if disposable gloves are worn. This violation was immediately corrected by the establishment management.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: There were two plastic storage bags of food in the kitchen handwashing sink, at the time the inspection was begun.
    Correction: The kitchen handwashing sink may be used for no purpose other than handwashing. We need to do everything possible to encourage frequent, and whenever necessary, handwashing. This violation was immediately corrected by the establishment management.

  • Cooling Methods (corrected on site)
    Observation: Cooked spanish rice was stored in four "baggies" that were pushed together, in close contact with one another-in the refrigerator-in a way that the air could not freely circulate around each "baggie." The "air space" is necessary for rapid cooling.
    Correction: There needs to be "air space" between each "baggie," so that cooling from 70 F to 41 F will occur rapidly, within 4 hours. Cooling times and temperatures need to be monitored carefully, with the digital thermometer.
