- Physical Facilities in Good Repair
Observation: There is an area of the floor, approximately 12 inches by 9 inches, between the bar area, and the entrance door to the main kitchen room, that has worn through to the subsurface. This area of the floor is not cleanable at the bacterial level.
Correction: We require that all floors in kitchen, bar areas, and food storage areas be maintained so that they are smooth and easily cleanable, at all times. This area of the floor needs to be repaired.

Observation: There is a carpeted mat, on the floor, in the smaller ('back") kitchen room.;We do not allow carpeted floor mats in kitchen rooms because they are not easily cleanable. Replace with an easily cleanable rubber mat without a carpeted surface.

- Equipment - Good Repair and Proper Adjustment
Observation: The wooden shelf unit in the kitchen is not sealed or painted.
Correction: All wood in the kitchen needs to be painted or sealed. We require that all equipment items in the kitchen and food prep areas be smooth, easily cleanable, and resistant to moisture. This sealing/painting needs to be taken care of prior to renewal of the permit, on, or before, 30-June-2014.

Observation: There were two cans of refried beans which had dents in seams, but were being stored among cans intended for service to customers.
Correction: Cans with dents in top, bottom, or side seams may not be used for service to the public. Cans with dents in seams need to be separated from canned goods intended for service to customers as soon as deliveries arrive and cases are unpacked.
- Equipment and Utensils - Durability (corrected on site)
Observation: There was a metal-banded pastry brush in the kitchen.
Correction: We do not allow pastry brushes in food establishments. The area between the brush and the metal band is not easily cleanable. And the metal band may rust.
- Equipment - Good Repair and Proper Adjustment
Observation: The gasket inside the door of the True refrigerator was torn, exposing rough surfaces which are not easily cleanable.
Correction: This gasket needs to be repaired or replaced
