    Observation: The nonfood contact surface of the wood shelves and wood partition in the front food prep area and the wooden hand wash sink support legs are not corrosion resistant, nonabsorbent, and/or smooth.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Backflow Prevention, Air Gap*
    Observation: The diameter of the air gap between the water supply inlet and the flood level rim of the utility sink in the rear kitchen food prep area is less than 1 inch in that a splitter was observed on the threaded faucet to allow the use of a detergent dispenser with the splitter threaded outlet lowering the air gap to below the sink rim.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.
  • Critical: Backflow Prevention Device, When Required*
    Observation: Backflow or backsiphonage prevention device not available on threaded faucet as required by law in that utility sink observed with a splitter with threaded outlets at the time of inspection.
    Correction: Provide a backflow or backsiphonage prevention device on all threaded faucets.
