    Observation: The ready-to-eat (RTE) commercially processed sliced turkey in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Follow-up to inspection of 4-25-14. Air gap has been installed in sink pipe under 3 compartment sink. Drain stoppers have been obtained. Need quaternary ammonium test strips. Operator was given the wrong kind. Health dept permit issued. Follow-up within 30 days if open. Need to obtain certificate for certified food manager.

3 compartment sink does not have air gap, air break, or floor drain. I consulted standardization office who said this needs to be corrected within 30 days. Need either floor drain with air gap/air break or air gap/air break in line to prevent back flow contamination. In meantime do not use this sink for any food prep such as washing and preparing salads, fruits, vegetables, etc. Need drain plugs for 3 compartment sink. Need test strips for quaternary ammonium. Operator had purchased wrong kind. Please move thermometer to front part of refrigerator. Need to seal floor/wall junctures in kitchen. Facility does not have a stove. Microwave will be used to warm foods. This serves as health department permit to operate, provided all required permits and inspections have been obtained.
