Unit inspected at temporary event and is also operating under a tent for cooking hamburgers and hot dogs. Discussed glove use and handwashing, cooking temperature of 155 degrees for burgers or a consumer advisory will be required. PIC stated hamburgers are not offered undercooked. Handsink set up outside. Most foods prepared in permitted facility and transported in coolers. Transport time about 1 hour. Reach in cooler was unplugged during transport. Recommend transporting cold foods in coolers with ice and placing in reach in cooler after unit is plugged in and reading 41 degrees or below. Recommend cleaning inside cover of smoker.

    Observation: Numerous foods cooked at permitted facility and transported in coolers hot holding at improper temperatures. Foods in transit about 1 hour.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. Ensure foods stay hot during transport.

    Observation: Mac and cheese and baked beans prepared and portioned in permitted faciltiy and transported to event cold holding at improper temperatures. Foods in transit about 1 hour.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Ensure foods stay cold during transport by using coolers. Place foods in reach in cooler once cooler is plugged in and reaches 41 degrees or below.

Food supplier is Restaurant Depot. All foods are prepared at Juicy Lucy permitted food establishment in Hanover County. Menu items: BBQ, Italian Sausage, Brisket, Ribs, mac and cheese, baked beans and coleslaw. Sides are cold held individually portioned and reheated for immediate service. Employee Health Form 1B is used, EHS recommended keeping a copy on file in the mobile unit. Discussed time line for additional refrigeration and hot holding unit (August 12, 2015). Observed good handwashing and glove use.
  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Wiping cloths improperly stored between use. Observed wet wiping cloths stored directly on counter.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Observed baked beans (51) and Cole Slaw (53) cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Per temperature log, 1 hour ago items had been at 39° and 40°. The reach in cooler had just been turned on and maintaining a temperature of 52°. When EHS completed inspection the reach in cooler was maintaining a temperature of 36°. EHS recommends discarding items if above 41° in 3 hours.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration. Observed steramine at in use 3 compartment sink at 100ppm.
    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations. Per steramine label, sanitizer concentration shall remain at 200ppm. Person in charge adjusted sanitizer concentration to 200ppm.

The following items have been obtained:
1. Test strips for steramine sanitizer.
2. Food grade hose for potable water source.
3. Service area approval/agreement letter.
4. Bolted covers for outdoor burners.
5. Approved grey water disposal method.
Discussed the following:
1. 60 day time line for electric hot holding unit integral to mobile unit. Sides will be pre-portioned and reheated in microwave until unit is obtained.
2. 60 day time line for under the counter cooler or approved refrigerated truck.
Mobile food establishment permit issued.
