I spoke with the manager about methods used for the station pans, how to switch out pans with back-up pans so that old pans do not keep getting refilled. No violation observed, just discussed methods.
  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor or food stored less than 6" above the floor. (Walk-in freezer);Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Food - Miscellaneous Sources of Contamination (corrected on site)
    Observation: Breakfast food in the reach in freezer stored below ice sheets used for the cold bar.
    Correction: Protect food from miscellaneous sources of contamination.

    Observation: Yogurt and liquid egg cold holding at improper temperatures in the Victory Reach-in
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. (Repair the refrigerator so that it cold holds food at 41 degrees or below even during heavy use)
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 150ºF.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
