    Observation: The following nonfood contact surfaces have accumulations of grime and debris: side of the floor-mounted equipment on the left side cook's line, handles on several spoons (corrected), and the ice cream box.

  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints. Beard guards are required to restrain facial hair.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: An employee was observed handling raw eggs without changing gloves and washing hands afterwards on the cook-line. An employee was observed touching a trash can without changing gloves and washing hands afterwards in the kitchen.

    Observation: Milk was measured with an internal temperature of 50.7 F (measured with the inspector's thermometer) in the small RIC in the service area. All TCS foods were relocated.Egg whites were observed stored on the counter with an internal temperature of 70 F (measured with the firm's thermometer). Egg whites were voluntarily discarded.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the cook-line and hung in the dishwashing area are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

    Observation: Plastic spatulas at the dishwashing area was observed with cracks and pitting which prevents necessary maintenance and easy cleaning.

    Observation: The food-contact surfaces of the following equipment were not sanitized: large mixing bowl. Based on conversation with the PIC, the large food contact equipment that does not fit in the dish machine were not being sanitizing after washing.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
  • Equipment and Utensils, Air-Drying Required
    Observation: Clear plastic containers on the clean rack and metal pans in the back storage area were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: Single-use food containers were observed stored in standing water at the front service area.

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: several plates on the cook's line and stainless steel pan on the dry storage rack. All equipment was placed in the dish machine area.

    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands. Observed employee place raw frozen hamburgers on the grill, and then proceed to plate up ready to eat food. Also observed another employee don gloves without first washing their hands. PIC talked with employees and corrected both situations.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

During conversation with PIC, it was discovered that the in-use utensils on the line are cleaned at the end of every shift, which is about every six hours.
