We discussed soup and ranch dressing preparation. Both are considered preparation from ambient temperature(room temperature). Regulations require a 4 hour cooling time. These must decrease to 41 F within 4 hours. I recommend prechilling products before making the mixture.

    Correction: Cover all waste containers.

    Observation: Dust bunnies found on fan grill covers inside walk in. Vent above dishmachine is dusty.
    Correction: Clean.
