No critical violations. Vegetable soup was put together this morning. Upon opening cans of veggies you have 4 hours to bring the mixture down to 41 F. Do not cover tightly or stack. It is to your benefit to prechill cans of ingredients so that when they are opened and mixed together the temperature has already been decreased. Consider the prechill step. Wiping cloth buckets are to have sanitizer in it for wiping down counters or tray area.

    Observation: Floor drain under 2-c sink and floor drain in under dishmachine are dirty. It appears that they have not been cleaned since last school year. Floor beside mop sink is dirty. Mildew is growing along edge of walk in floor.
    Correction: Clean as soon as possible.

Shelf for under dishtable has been ordered to replace bare wood. Nuggets on rack were 71 F. These were going to be cooked for today's lunch. Do not pull these out until ready to place in oven. Sliced cheese was placed on counter. This was going to be used for toasted cheese sandwiches if needed. Do not place cheese at room temperature. Keep in refrigerator. PIC returned to refrigerator.

    Observation: No written procedures for the use of time as a public health control with potentially hazardous foods.
    Correction: Provide written procedures for the use of time as a public health control. The procedures must include the following steps or practices: a. Food must be marked with the time within which it must be cooked, served or discarded. b. The food is served or discarded within four hours from the time when the food is removed from temperature control c. Food in unmarked containers or packages, or for which the time expires is discarded and d. Written procedures are maintained in the food establishment and made available to the regulatory authority upon request e. Once time is implemented as a control measure for potentially hazardous food, no other measures may be substituted. PIC and I discussed writing her policy. Make the policy generic so it will work daily. PIC documents temperatures on food 3 times a day. Chef salads are placed on ice packs for service. These are to be added to time control policy.

Test tape did not turn black until 3 racks were run through and wash temperature and final rinse temperature rose a few degrees - suggest raising wash temperature a few degrees. Monitor temperatures on this unit frequently. Test tapes should be run using the food tray children eat from.
