No foodservice operation was observed during today's inspection.As stated by the owner, the facility's proposed opening date around Christmas 2015. The operator provided probe thermometer, chlorine test strips at this time. An Employee Health policy was discussed and issued at this time. Also active managerial control and knowledge was discussed with the owner today. Note: Discussed with the owner that the ice machine can not have a drain line into the prep/warewashing area handsink and to monitor the walk-in freezer to ensure the food products are frozen and an accurate thermometer is installed in/on the unit. The ServSafe and Food Safety Training information was also issued at this time.
Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Site visit conducted. Currently not in operation. Operator to call once full time cook has been hired, with a projected opening date. Inspector to email serv-safe flyer. No violation noted during this evaluation.

The operator was informed to install a splashguard between the side prep table and handsink (where the slicer is located). The facility is approved for foodservice operation pending an issuance of a Certificate of Occupancy by Chesterfield Building Dept. note
Critical: Handwashing Lavatory* (repeated violation) Observation: There is no handwash lavatory along the cookline, preventing routine handwashing by food workers.
Correction: Install an additional handwash lavatory along the cookline to allow convenient use by food workers. Prior to installing additional plumbing fixtures the permit holder must apply and gain approval through the necessary regulatory agencies.
Physical Facilities in Good Repair (repeated violation) Observation: Exposed sheetrock and cut-out areas were observed on the cookline. Also noted were cracks in the flooring on the cookline and warewashing areas and raw wooden surfaces at the bar area.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Follow-up
The operator was informed to re-submit an accurate layout for the facility and to re-evaluate the layout of the cookline and related equipment to allow for the processing flow of the food products, prior to the compliance inspection. The facility is not currently approved for foodservice operation at this time.
