  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination. (Beef over fish pork over cooked RTE items)
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.
    Items were re-arrange to ensure no cross contamination could occur.
  • Critical: Cooling* (corrected on site)
    Observation: Pinto beans cooked on 2.7.16 were held at 44 degrees at the time of the inspection (10:40am 2.8.16).
    Correction: Cooked TCS foods shall be cooled using the two step method (charts and instructions provided to the pic). This process will facilitate proper cooling and prevent harmful bacteria growth.
  • Cooling Methods
    Observation: The methods used for cooling were not adequate. )Documentation was provided to the PIC with the methods and one step and tow step cooling logs to be utilized during the cooling process to ensure TCS items are cooled properly.)
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: Prepared TCS items that were dated had not been discarded with in 7 days of preparation or opening (cooked ham, heavy whipping cream, homemade slaw, shrimp scampi sauce and tuna)
    Correction: TCS foods dated for disposition after preparation or opening shall be discarded, sold or used by the date on the container. TCS items past the date were voulntaryly disposed of by the PIC
