    Observation: There were no temperature measuring device located in the drawer coolers.
    Correction: Provide temperature measuring devices in all cold holding equipment.

    Observation: There is a floor mounted equipment that is not elevated off the floor. A cleaning hazard exists.
    Correction: Install casters, or approved 6" legs on the large Pepsi upright display cooler.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Accumulation of dust on cooler & freezer refrigeration coils.
    Correction: Clean refrigeration coils more frequently.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing sink next to the dishwasher was blocked, preventing access by employees for easy handwashing.
    Correction: Provide access to handwashing sinks during all hours of operation. Remove the utensils preventing its use.

    Observation: Raid aerosol insecticides in kitchen and storage room.
    Correction: Pesticides are to be applied by an certified pest control applicator or a person under the direct supervision of a certified applicator. Remove Raid products from foodservice area.

    Correction: Provide thermometers in all coolers and freezers.

    Observation: Cook's thermometer not available with proper range.
    Correction: Provide a metal stem cook's thermometer so employees can monitor food items.
  • Equipment - Fixed Equipment, Elevation or Sealing (repeated violation)
    Observation: The Pepsi 2-door upright display cooler lacks castors or 6" legs. A cleaning hazard exists.;Install castors or approved 6" legs on the Pepsi cooler.

Facility has 3 handsinks.

No specs on hot water heater.
Large electric in closet by dining room restroom.
The rest of the building uses a AO Smith 30 gal 4.5 KW unit.

Discussed Handwashing, Glove Use handout. Dishwasher appears to be working properly. Notes: Mop sink room has a painted concrete floor
  • Critical: Hands - When to Wash* (corrected on site)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after engaging in an activity which may have contaminated his/her hands.
    Correction: Instruct food employees to clean their hands before engaging in food preparation including working with food, clean equipment, and single-service articles to prevent cross contamination when changing task.
  • Hair Restraints - Effectiveness
    Observation: Food handlers observed working in the kitchen without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, caps, or hair nets.
  • Food Storage - Clean and Dry Location
    Observation: Inadequate dry storage for food items.
    Correction: Provide adequate approved dry storage. Recommend a wall shelf over the beverage / POS counter, a cart in the ice maker area, and approved tall deep cabinets with doors in the mop sink room, and in the alcove with coat rack.
  • Food Storage - Clean and Dry Location
    Observation: Beverages stored in mop sink room.
    Correction: Install a tall deep cabinet with doors in the mop sink room if food / drink is to be stored in room.
  • Temperature Measuring Devices
    Observation: There were no thermometers in the 2-drawer cooler, 2-door under-counter cooler, or 1-door under-counter freezer.
    Correction: Provide thermometers in all refrigeration units.
  • Cooling, Heating, and Holding Capacities
    Observation: Miscellaneous potentially hazardous foods on prep counter in bins in pans of ice.
    Correction: Provide additional refrigeration necessary to maintain food items at proper temperature for extended periods of time. Recommend a small prep cooler or cooling well next to grill.
  • Equipment - Fixed Equipment, Elevation or Sealing (repeated violation)
    Observation: The Pepsi upright display cooler in the kitchen is not elevated off the floor or sealed to the floor. A cleaning hazard exists.
    Correction: Alter the installation of the equipment to allow easy floor cleaning. Install casters or approved legs a minimum of 6 inches.

    Observation: Soiled towels were found stored in a location that may directly or indirectly contaminate food or food-contact surfaces.
    Correction: Store soiled linens in a dirty linen bin.
