This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit and I observed excellent posters reminding employees at each sink about which ones were for handwashing and which ones were for other food prep activities. Thank you. The following issues require attention:
1. Please do not overstock the fish in the display case in order to keep the temperatures below 41°F. Use a single layer of fish on the ice in order to keep appropriate temperature
2. Please ensure that there is a copy of the shellstock tags kept with each batch of the product at all times.

  • Molluscan Shellstock/Maintaining ID/Tags Attached until Container Emptied
    Observation: Observed that the tags were not in a container of a box of oysters in the walk in refrigerator for the seafood. The tag had been moved to a separate container for the oysters that were on display.
    Correction: Shellstock tags shall remain attached to the container in which the shellstock are received until the container is empty. Person in Charge is to make sufficient copies of the shellstock tags in order to keep a copy of the tag with each container of the product.
  • Critical: Sanitize/Chemical/Manual & Mechanical/Concentration & Exposure Time (corrected on site)
    Observation: Observed a concentration below minimum for the quaternary ammonium sanitizing solution used in the 3 compartment sink. The sanitizing bag was empty.
    Correction: The sanitize basin of a 3-vat sink shall operate at a chemical concentration of at least 50-100ppm of chlorine, 12.5 - 25ppm of iodine, or 200ppm of quaternary ammonium compound. Food employee replaced sanitizing bag with a new bag and concentration was at 300 ppm.

Shellfish tags shall be recorded with the date the last one was used, and then kept for 90 days in chronological order.

    Observation: The date on which the last shellstock from the container is sold or served was not recorded on the tag or label.
    Correction: The date when the last shellstock from the container is sold or served shall be recorded on the tag or label.

The following needs to be installed:
1. All hand sinks soap and towel dispensers.
2. Caulking on all sinks.
3. Sealing all baseboards and crevices.
4. Labeling all waste pipes.
5. Hand wash signages.

*Fill all the 3 compartment and prep sinks halfway before my arrival.
