This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during this visit. Thank you. The following issues require attention:
1. Please ensure that there is sufficient sanitizing solution available at the three compartment sink and ensure that all sanitizing spray bottles have sufficient concentration of sanitizing solution.
Note: An updated Employee Health Policy Poster was provided to the Person in Charge and its details and changes were discussed with her.

  • Utensils That are In-Use / Between-Use Storage
    Observation: Observed several knives used in the produce prep area that were stored in the crack in between the prep table and a knife holder.
    Correction: During pauses in food preparation or dispensing, food utensils shall be stored in one of the following manners: 1) in the food with their handles above the top of the food and the container, 2) in food that is not potentially hazardous (time/temperature control for safe food) with their handles above the top of the food within containers or equipment that can be closed, 3) on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food contact surface of the food preparation table or cooking equipment are cleaned and sanitized, 4) in running water of sufficient velocity to flush particulates to the drain, 5) in a clean, protected location if the utensils are used only with a food that is not potentially hazardous (time/temperature control for safe food), or 6) in a container of water if the water is maintained at a temperature of at least 135°F and the container is cleaned frequently. Person in Charge removed the knives and will find an alternative place to store them.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures:containers of cut cantelope, honey dew and watermelon in the produce walk in refrigerator were at 55°F,58°F and 60°F. A bag of bean sprouts in the open display case on the aisle was at 51°F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. Person in Charge discarded the containers of cut melon and bean sprouts.
  • Critical: Food-Contact Surface Sanitized before Use after Cleaning (corrected on site)
    Observation: There was no measurable concentration of sanitizing solution in the sanitizing spray bottle in the produce prep area and there was no sanitizing solution available in the three compartment sink set up in the produce prep area.
    Correction: In conjunction with Section 4-703.11, the food-contact surfaces of equipment and utensils shall be sanitized before use and after cleaning. Person in Charge replaced the bag of sanitizing solution and discarded the contents of the sanitizing spray bottle. Person in Charge to refill bottle when making new solution.
