    Observation: Hotdog chili hot holding at improper temperature of 110 degrees.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria. Food discarded.

    Observation: Container of ground beef cold holding at improper temperature of 55 degrees.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Ground beef moved to frigidaire freezer.

Facility was dealing with leak in roof in back of restaurant at the time of inspection. Leak was caused by torrential rains the evening prior. No foods were in danger of contamination by leak.

  • Temperature Measuring Devices - Ambient Air and Water (corrected on site)
    Observation: The ambient (air/water) temperature measuring device (degrees C) located in the Roper refrigerator is not accurate.
    Correction: Provide a temperature measuring device that is easily readable and accurate to +/-1.5 degrees Celsius in the intended range of use.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a bleach test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Backflow Prevention, Air Gap* (corrected on site)
    Observation: An air gap between the water supply outlet and the flood rim level @ three vat sink is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.
  • Outer Openings - Protected
    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Screen on back door, ceiling in storage area, doors left open
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces. CORRECT WITHIN 30 DAYS
