By only having the walk in cooler the risk of food becoming contaminated is high. Getting another cooler should be thought about.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Tomato soup, pasta, and rice cold holding at 42 and 43 degrees in the walk-in cooler.
    Correction: mantainence man notified and manager will be notified tomorrow morning. Told staff to monitor the food to make sure it doesn't go any higher

Food was being prepped between lunch and dinner services while inspection was being conducted. Employee Health Policy was posted. Observed proper thawing procedure (under warm running water) being used. When food is served directly to rooms, disposable plates/utensils are used.
