No food temperatures taken. During games food is brought over from the main cafeteria and hot held. Some foods are brought over raw and fried on site. No potentially hazardous foods are kept in the refrigerators.
The racks in the large concession are beginning to rust. Repair or replace.
There was no sanitizer in all of the concession stands. Ensure automatic dispensers are dispensing sanitizer at the correct concentrations. If not, wash dishes in the cafeteria three compartment sink (since cafeteria dish machines are down).

  • Equipment - Fixed Equipment, Spacing or Sealing
    Observation: The mopsink is placed an inch or two away from the wall and is not sealed to adjoining equipment or walls, this creates a crevice that can not be cleaned.
    Correction: Seal the mop sink to adjoining equipment or walls since it is exposed to spillage or seepage.
  • Critical: Water Capacity* (repeated violation)
    Observation: Water heater observed turned off and maintenance said it was working the other day, but they did repair work and must have tripped a fuse, consequently there is no hot water at the large concession stand.
    Correction: Ensure that water heater is turned on and set at proper operating temperature. Immediatly restore hot water. A follow-up inspection will be conducted next week.

    Observation: The men's urinal in the restroom on the left side of the stadium is broken and holding foul smelling water.
    Correction: Repair and maintain all plumbing components and fixtures.

    Observation: No disposable towels were provided at the hand washing lavatory in the 1st concession stand.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Toilet tissue was not present at each toilet.
    Correction: To minimize hand contact with fecal waste, toilet tissue is necessary for hygienic cleaning following use of toilet facilities. Toilet tissue must be supplied to meet the demand

    Correction: Repair to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.

The concession stands were not open at the time of the inspection. There were no foods to take temperatures of, but ambient air temperatures were recorded and all units were cold holding at proper temperatures.

    Observation: The following utensils were observed soiled to sight and touch: thermometers in the large home concession stand were observed soiled in their cases, the inside of the cases were soiled as well from placing the thermometers back into their cases soiled.
    Correction: Clean and sanitize these surfaces for food contact. If thermometers are in storage they should be clean to prevent the accidental use of them by food employees while they are soiled and cross-contaminating food.

    Observation: Men's restroom by small home concession stand needs to be cleaned and in the 1st concession stand (visitor side) there was mosquitoes in the toilets.
    Correction: Maintain restrooms clean. The restrooms only get cleaned before a game and in between games the restrooms are still being used by people practicing, but not cleaned or checked regularly.
11/04/2014Routine
EHS inspected stand during Homecoming Football game. Staff were arriving during the inspection (scheduled to arrive at noon, game starts at 2 pm, gates opened at noon). EHS able to take temperatures of the food as it was being delivered from the main cafeteria. Advised to ensure main cafe staff are placing the hot foods directly into warmers that are holding above 135*. Most food items observed were delivered to the concessions stands well over 135* with the exception of two pans of burgers. Instruct staff to ensure burgers cooked to at least 155* and held hot at or above 135* once removed from grill.
  • Person in Charge
    Observation: Food employees/volunteers are not informed of their responsibility to report to their PIC information concerning their health and activities as they relate to diseases transmitted through food.
    Correction: PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food.
  • Critical: Temperature* (corrected on site)
    Observation: Hot burgers (prepared in main cafe) received at inadequate temperatures (measured at 125-130*).
    Correction: Advised to ensure potentially hazardous/temperature control for safety foods are received hot at least 135*. Corrected by labeling the time the food shall be discarded. EHS to help operator with written procedures to use time as a public health control.
  • Temperature Measuring Devices
    Observation: Thermometer not provided inside the display refrigerator (stored outside) at the visitor stand.
    Correction: Provide a thermometer inside the unit at the front by the door.
  • Equipment - Good Repair and Proper Adjustment
    Observation: 1) Duct taped used to seal windows in corner stand and visitor stand is no longer intact.
    2) paint chipping/corroding on tables adjacent to the three compartment sink in the big stand
    3) side of small table adjacent to the hand sink next to the three compartment sink in the big stand is corroded
    4) hole's in prep table adjacent to the fryers in the in the big stand

    Correction: Maintain equipment in good repair and proper adjustment.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: Fryer baskets in the big stand are not clean (stand last used about 30 days ago).
    Correction: Clean and sanitize food contact surfaces. Instruct employees/volunteers to clean prior to leaving the stand. Staff present began to fill three compartment sink to clean.
  • Equipment - Non-Food Contact Surfaces and Utensils
    Observation: Interior of ice machine (panel) is not clean.
    Correction: Clean.
  • Non-Food Contact Surfaces
    Observation: The non-food contact surfaces are not clean:
    1) service counter at the big stand
    2) top of hot holding cabinets at the big stand and corner stand

    Correction: Clean.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles
    Observation: Single service items stored above big stand grill line are observed unprotected from contamination.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser. Discontinue storing multiple stacks of food boats lined with deli paper between events. The last time this stand was used was about 30 days ago. EHS observed food boats with visible debris/dust.
  • Handwashing - Using a Handwashing Lavatory
    Observation: Hand sinks are not accessible in the corner and visitor stands: table blocking sink in corner stand and bucket stored in sink at visitor stand.
    Correction: Hand sinks shall be accessible during all hours of operation. Stands were in the process of being set-up for today's football game.

    Observation: Hand sink-mop sink is slow to drain.
    Correction: Repair so it drains properly.
  • Outer Openings - Protected
    Observation: Gaps exist around the service windows in the concession stands.
    Correction: Eliminate the gaps by using approved methods such as installing rubber weather stripping (discontinue using duct tape).
  • Hand Drying Provision (repeated violation)
    Observation: Paper towels not provided at the hand sink-mop sink in the big stand.
    Correction: Ensure all hand sinks are supplied with a paper towels.

    Observation: The physical structures are in poor repair:
    1) arch way/frame is blistered in the big stand (see near the ice machine) and the wall attacehd is rtusy and stained
    2) ceiling tile in same area is moisture damaged
    3) wall damaged at big stand hand sink-mop sink
    4) base tiles not sealed to the wall right of the mop sink in the visitor's stand

    Correction: Maintain the physical structures in good repair to facilitate cleaning and eliminate potential pest harborage conditions.

    Observation: The physical structures are not clean:
    1) floors in all three stands (especially below cooking equipment)
    2) walls at all the stands especially at the cookline/fryline

    Correction: Clean.

    Observation: 1) Cob webs are present at all stands, particularly in corners of walls and below some equipment.
    2) Rodent droppings (appears to be rat) observed on the floor in the big stand at the old syrup rack.

    Correction: Use approved methods to control pests in the food facility. Clean to remove cob webs and rodent droppings. Monitor for new rodent activity and contact certified pest control operator as needed.

Stand not in operation at time of evaluation. Per operator, last time operated was 1st weekend in September. Suggested the stands and equipment are cleaned after each event. Per operator, staff will be cleaning stands imminently due to scheduled football game tomorrow.

    1) stainells steel counter/supports in stand A (across the three compartment sink) are corroded
    2) utensil drawer of prep table in stand A
    3) holes exist in stainless steel table top adjacent to ice machines in stand A
    4) vinyl chair cover torn in stand A
    5) one of the fryer lid handle is loose (screw is missing) in stand C

    Correction: Maintain equipment in good repair to facilitate cleaning and operation.
