No risk factor violations noted at the time of inspection. Notes: Salad bar and service line food is not kept for reservice. Some of these items are not at proper temperature (hard boiled eggs 50F (cooling), watermelon 44F) but because they are discarded after lunch, time may be used as a control. A written policy must be made stating that salad bar items and service line items are discarded at the end of lunch, not to exceed 4 hours. Also, food employees must have hair restraints (nets or ponytails/buns). Gloves should be discarded and not placed on work tables for re-use.
