Correction: Discontinue storage of kitchen ware in this manner and the outdoor use of rice warmers.

- Ice Used as Exterior Coolant - Prohibited as Ingredient
Observation: Ice used as a medium for cooling the exterior surfaces of food is also for drink ice or used as food. Operator storing creamer in the ice used for drinks.
Correction: Cease use of ice used as a cooling medium for food. Ice that has been in contact with unsanitized surfaces or raw animal foods may contain pathogens and other contaminants.
- Utensils - In-Use - Between-Use Storage
Observation: A sccop with a handle not provided using a bowl to scoop ice.
Correction: Provide a scopp with a handle.
- Cooling Methods (corrected on site)
Observation: The methods used for cooling were not adequate. Product was not properly cooled before taking to the event the unit does not have the capability to properly cool product.
Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling. Operator to ensure all product is properly cooled before taking out for service on the truck. Operator agreed to using time as a control and not serve past 8:00 pm.

- Handwashing Cleanser - Availability (corrected on site)
Observation: Soap was not provided at the hand wash sink (only hand sanitizer was present).
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
