Hand washing sinks available and in use with warm water, soap, and towels. Ware washing machine okay. PIC has very good food safety knowledge. Reviewed cleaning schedule and proper in-use equipment for bulk containers (no cups) with PIC. Reviewed 'time-as-control' procedures for sushi and custard products on buffet. PIC to monitor proper storage raw eggs in walk-in. PIC to provide adequate thermometers for all refrigeration (and 2 door Victory). PIC to monitor hot hold display case for custard products. Owner/PIC is ServSafe certified.

Owner knowledgeable on food safety risk factors and employee health. Sushi ingredients are provided from an approved source. Owner monitors temperatures on refrigeration units, cooking foods and buffet line and dish washer with probe thermometer he carries with him while working. Owner monitors dishwasher sanitizer with strip he carries with him while working. Raw and ready-to-eat foods are segregated by storing meats on one side and vegetables on other side of the cooler. Owner has cleaning schedule in place for all non-food contact surfaces (refrigerators, walk-in coolers, walls, floors. etc. All food contact surfaces cleaned daily and/ or as needed. NO VIOLATIONS OBSERVED. Owner knowledgeable on food safety risk factors and employee health. During inspection observed several employees washing hands prior to handling foods. Owner is Serv-Safe certified and provides and post food safety information throughout the kitchen to remind staff of proper food handling practices. Staff observed following good food safety practices. Frozen foods were delivered at proper temperatures.
