| Professionally managed kitchen. Facilities are clean, organized, well-stocked, and controlled. Lighting and ventilation are good, and abundant space is provided for storage and production. Staff are knowledgeable, personable, and professional. No deficiencies noted. HACCP review: HACCP plan, refrigeration logs, sanitizer logs, cook log, cooling log, and thermometer calibration. Records are kept in real time and reviewed by a HACCP trained staff member. Also conducted at this time was a school facility inspection, independent of the inspection of the food operation. Reviewed were restrooms, water fountains, water supply, sewage disposal, grounds maintenance, hallways, entryways, ventilation, and locker rooms. School is well maintained and in very good condition. | No deficiencies noted. Facility is well run, with a very knowledgeable and proficient manager, properly-trained staff, and responsive superintendent. Serving over 500 students, this kitchen operates efficiently, using time as PHC in the serve line and batch cooking for the 3 different lunch groups served. Equipment is well-maintained and clean, with appropriate sanitizers in use. Facility is organized, brightly illuminated, and has adequate stock on hand. Discussed with Mrs. Adams a better way to document receiving temps on invoices. Thorough HACCP review conducted. Full school evaluation also conducted. A number of minor issues (torn shower curtains, one restroom sink with no hot water) were repaired immediately. School inspection is attached to printed file. | Inspection of Town of Galax summer food program. Meals to be offered today to 60 students who are in the area for band camp. While this facility is open to feed any children in need, operators state that they never have any walk-ins, just scheduled groups like summer school and school-affiliated summer camps. Facility is well-run, clean, brightly lit, well-stocked, and organized. Food on hand at inspection was considerably less than is normal for the school year.
