Facility is well-run, with knowledgeable staff who implement food safety & sanitation controls from well-established habits. Facilities are well-lit, organized, fully stocked, and efficiently run. All of the serve lines operate using time as PHC, with the 4 hour window starting from when the food is removed from the cook step. Cooking was complete for the day when inspector arrived. A HACCP records review included HACCP plan, cook temps, receiving record w/ temps, salad bar temps, refrigeration logs, & time record of serve line PHC. Reminder to manager that digital and stem thermometers used for monitoring food temps must be calibrated as part of HACCP verification procedures. This step cannot be eliminated from the HACCP plan. If a thermometer cannot be physically adjusted when out of calibration, hand-written adjustments on the instrument will suffice, but units must maintain accuracy of no more than +/-2 degrees F. Mgmt is reminded to use sani-buckets for all wiping cloths. Full school facility inspection conducted, evaluating restrooms, classrooms, utilities, water/sewer, water fountains, and maintenance.
