The purpose of this visit was to conduct a risk factor inspection. Environmental health specialist discussed leak at hand sink, coving and tile replacement and establishing a cleaning schedule.

The purpose of this visit is to conduct a routine inspection. Time for this inspection is for the inspection only. NOTE: Catering/Bistro is shared space between several Johnson Center food court food establishments including Indaroma, Hissho Sushi/Mein bowl and Red Hot and Blue.

NOTE: Catering/Bistro is shared space between several Johnson Center food court food establishments including La Patisserie, Indaroma, Subconnection, Express Convenience store. Indaroma has refrigeration unit stored in Catering/Bistro and is listed uner Indaroma Inspection Report.
PLEASE SEND INVOICE FOR REPAIR OF DISH MACHINE TO HEALTH DEPARTMENT BY 9/29/14.
  • Critical: Sanitize / Hot Water / Mechanical/Thermolabel Test Verified (corrected on site)
    Observation: Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized.
    Correction: Immediately discontinue use of the dishmachine. Repair the dishmachine so that a thermolabel will turn black. Until the machine is adequately repaired, set up the 3 vat sink to manually wash, rinse and chemically sanitize food-contact surfaces. MAINTENANCE CALLED FOR REPAIR AND 3VAT SINK WILL BE USED.
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the FLOORS along the cookline underneath and in between equipment is in need of cleaning.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

  • Critical: Eating, Drinking, or Tobacco Use / Proper Food Employee Drinking Containers (corrected on site) (repeated violation)
    Observation: Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Observed open beverages stored in the dry storage area, the salad prepping table, and the meat slicing prep area.
    Correction: Food employees may have beverages in the kitchen areas as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination to food, equipment, utensils, linens, and single service items. Certified food manager discarded beverages.
  • Critical: No Bare Hand Contact with RTE Foods (corrected on site)
    Observation: Food employee(s) was observed handling the following ready-to-eat foods using their bare hands: sliced carrots at the buffet cold holding station.
    Correction: Except when washing fruits and vegetables, food employees may not contact ready-to-eat foods using their bare hands. Employees shall be using suitable utensils such as deli tissue, spatulas, tongs, or clean disposable gloves to handle all ready-to-eat foods. Proper handling of food and effective handwashing procedures will help prevent foodborne illness. The CERTIFIED FOOD MANAGER DISCARDED THE CARROTS AND REPLACED WITH ANOTHER BATCH.
  • Equipment / Good Repair / Components / Gaskets
    Observation: The door gaskets of the following unit(s) are (missing, damaged): Beverage Air #6 cooler.
    Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
  • Physical Facilities Good Repair
    Observation: Observed that the light fixtures in the dry storage room is not maintained in good repair.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
