Indaroma has refrigeration unit stored in Catering/Bistro and is listed uner Indaroma Inspection Report. PLEASE SEND INVOICE FOR REPAIR OF DISH MACHINE TO HEALTH DEPARTMENT BY 9/29/14.

Observation: Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized.
Correction: Immediately discontinue use of the dishmachine. Repair the dishmachine so that a thermolabel will turn black. Until the machine is adequately repaired, set up the 3 vat sink to manually wash, rinse and chemically sanitize food-contact surfaces. MAINTENANCE CALLED FOR REPAIR AND 3VAT SINK WILL BE USED.

Observation: Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Observed open beverages stored in the dry storage area, the salad prepping table, and the meat slicing prep area.
Correction: Food employees may have beverages in the kitchen areas as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination to food, equipment, utensils, linens, and single service items. Certified food manager discarded beverages.

Observation: Food employee(s) was observed handling the following ready-to-eat foods using their bare hands: sliced carrots at the buffet cold holding station.
Correction: Except when washing fruits and vegetables, food employees may not contact ready-to-eat foods using their bare hands. Employees shall be using suitable utensils such as deli tissue, spatulas, tongs, or clean disposable gloves to handle all ready-to-eat foods. Proper handling of food and effective handwashing procedures will help prevent foodborne illness. The CERTIFIED FOOD MANAGER DISCARDED THE CARROTS AND REPLACED WITH ANOTHER BATCH.

Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Observation: Observed that the light fixtures in the dry storage room is not maintained in good repair.
Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
