Complaint -Basement of home used for food preparation. Confirmed. Home used for food preparation and the storing of food. Large volumes of raw meats stored in 3 separate refrigeration units in basement of home residence. The food storage and preparation of food at home shall immediately cease, not doing so shall result in the revocation of Mobile Food Unit Permit. Owner shall submit alternate plan to health department for the preparation and storage of food. Plan shall be provided to the health department 2 weeks from today, July 21, 2015. Facility using Rodeffer address since May 28, 2015.

    Observation: Gallon containers of BBQ sauce stored directly on the floor.
    Correction: Elevate food to at least 6" off floor.
  • Critical: Equipment and Utensils - Multiuse, Characteristics*
    Observation: The food contact surface of the bulk BBQ containers is not safe.
    Correction: Replace the BBQ containers to permit easy cleaning and prevent the migration of deleterious substances, or transference of colors, odors, or tastes to food.
  • Equipment - Cutting Surfaces
    Observation: The cutting board provided is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the refrigeration unit has accumulations of grime and debris to include gaskets.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Operation days and locations: Thursday - Westend Motors Lovettsville, Friday - Luckets, Saturday - Carlyle & Anderson Purcellville.
Observed the following: Refrigerator has build up of ice particles - Defrost, Stainless steel strip not adhered to 3 basin sink - Adhere and seal, Ensure all areas surrounding the 3 basin sink and hand sink are sealed, Specifications for clean and grey water holding tanks are to be submitted within 24 hours, Manager shall obtain Food Safety Certification.
