2. Facility is using chlorine bleach as the sanitizing agent. Test kit observed.

    Observation: There was no temperature measuring device located in the tall reach-in cooler.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

Equipment will be cleaned and sanitized inside the fire house every four hours.
Inspection conducted at the Frog Level Fall Festival.
  • Hair Restraints - Effectiveness
    Observation: Employees working in the food service area without proper hair restraints.
    Correction: Ensure employees working with food are wearing hair restraints.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handsink was blocked at the beginning of inspection.
    Correction: Ensure employees have easy access to hand washing.

Inspection conducted at the Caroline Agricultural Fair.
The above observations and the following were discussed with the person in charge:
-Ensure the bleach sanitizer in the 3 compartment sink is measured at 50-100 ppm.
  • Critical: Water Capacity*
    Observation: The water source and system serving this food service establishment has been interrupted. The PIC stated that the pump for the water supply went out at the event. PIC provided a food grade hose to fill the 3 compartment sink (public water onsite at event) and a water container with a free flowing faucet was provided for handwashing.
    Correction: Ensure the pump is repaired on the unit prior to operating the mobile unit for future events. Permission given to operator to operate at this event only with the pump in disrepair.

1. this inspection was conducted at the Bowling Green Harvest Festival
2. No foods were available for temperatures
3. Mobile unit did not have generator power at this time
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the gaskets on the reach in cooler has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Kitchenware and Tableware
    Observation: Single-service food containers and foil pans were not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination
    Correction: Handle, display, or dispense single-service and single-use articles so the food- or lip-contact surface are protected from contamination.
