Observation: The interior surfaces of both ice machines, which were in contact with a non-potentially hazardous food item (ice) were observed soiled with accumulations of grime and debris.
Correction: Clean the interior surfaces of the ice machine at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

Correction: Plumbing systems and components shall be maintained in good repair.

No employees were present during inspection, and no food was being prepared. PIC has contacted maintenance about getting dish machine fixed. Fax in copy of work order to Health Department so we can verify corrections have been made.

Observation: Walk in freezer was observed with ice hanging from the condenser unit, and also and accumulation of ice of the floor and on the plastic door strips and does not allow for necessary maintenance and easy cleaning.
Correction: Remove ice to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.

Observation: Dish machine final rinse temperature measured only 150'F, which is not hot enough to sanitize equipment. PIC dempnstrated how a 3-compartment sink wll be set up for use when needed until the unit is repaired.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
- Kitchenware and Tableware
Observation: Observed silverware not stored with handles facing up so that the food- or lip-contact surfaces are protected from contamination
Correction: Handle, display, or dispense single-service and single-use articles so the food- or lip-contact surface are protected from contamination.
