Today is routine inspection in conjunction with requested DSS inspection. Substantial compliance with the Virginia Food Regulations as observed on this date. Reviewed: food storage, employee health policy (posted), food temperature, cleaning and sanitization, equipment, food service glove use policy. Note: menu does not include any raw meats, meats are precooked & commercially prepared. Discussed heating commercial made foods to 135F and holding at 135F. Discussed cold holding requirement of 41F
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (repeated violation)
    Observation: Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: bottom of kitchen refrigerator appears to need cleaning.
    Correction: Clean and sanitize these surfaces for food contact.Clean bottom of kitchen refrigerator.

Discussed health policy with manager. Staff readily available and knowledgeable.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Quatinary (Proforce) sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the quat sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100°F. Operator discarded the solution and made new. Sanitzer was tested at adequate levels of 200.

    Observation: Sliced ham that was date marked 10-30-13 was not discarded in 7 days.
    Correction: Discard after the food has been open for 7 days. Sliced ham was discarded voluntarily during inspection.
  • Equipment - Cutting Surfaces
    Observation: The cutting board in the kitchen is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: Can opener soiled.
    Correction: Clean and sanitize these surfaces for food contact. Can opener was washed, rinsed and sanitized during inspection.
