The facility is in significant compliance with the food code. The facility is clean and organized. Discussed employee health policies with the person in charge and staff. Both were knowledgeable about reporting policies. Active managerial control of key food handling areas observed.

  • Warewash Machines, Temperature Measuring Devices
    Observation: The temperature measuring device for the (wash/rinse/sanitizing) tank of the warewashing machine is (missing/not operating.) For the final rinse.
    Correction: Provide a functioning temperature measuring device at the (wash/rinse/sanitizing) compartment so employees can routinely monitor the water temperature.
  • Warewashing Machines, Flow Pressure Device
    Observation: The pressure gauge does not appear to be functioning properly.
    Correction: Pressure gauge is operating backwards the psi should be reading between 15-25 psi pre the manufacturer.

    Observation: Floor drains draining slowly, water accumulation inside drain fixtures.Floor drains are not maintained in good repair
    Correction: As soon as possible have drain system evaluated and repaired by maintainenance personnel. Poor repair and maintenance compromises the functionality of the physical facilities.

Routine food-service inspection notes substantial compliance with the Virginia Food Regulations as observed on this date. Discussed the following with the site manager: 1) employee health information (policy is posted), 2) reviewed cooling procedures for any left-over foods, 3) discussed long-term corrective actions for mixing / creating sanitizer solutions (having employees monitor solutions with the chemical test kit).
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Top of ovens had some accumlated dust. Large floor fans had some accumulated dust.
    Correction: Manager agreed to have staff clean these items.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chlorine sanitizer being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940 (rated above 200 ppm)
    Correction: Utilize only a sanitizing solution that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces. Solution was promptly discarded by an employee and a new chlorine sanitizer was created using the chemical test kit.

    Observation: Outdoor walking and driving areas are such that they do not minimize dust, facilitate maintenance or prevent muddy conditions. Dumpster observed stored on ground - not asphalt or concrete.
    Correction: Surface outdoor walking and driving areas with concrete, asphalt, or gravel or other materials treated to minimize dust, facilitate maintenance, and prevent muddy conditions.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Working containers of floor grout cleaner is not properly labeled.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents. Manager took corrective action.

Substantial compliance with the Virginia Food Regulations as observed on this date. Risk factor/ critical food items noted no violations. Foods observed at proper temperatures. Staff observed wearing and using disposable gloves appropriately (no bare hand contact with ready-to-eat foods). Dish machine observed operating properly at 180 F+ on final rinse. Note: Kitchen area observed as organized and well maintained. Calibration of kitchen thermometers (by staff) observed taking place.
No violation noted during this evaluation.
