Correction: Have the license holder require employees or applicants report to the person in charge any information about their health and activities if they are diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus. Hand out was given for reportable diseases and symptoms.

Correction: Cool potentially hazardous foods prepared from pre-chilled ingredients or ingredients at ambient temperature to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Tuna Salad discarded by owner voluntarily.

Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Out for two hours on the prep unit food was put back in walk-in.
Temperature Measuring Devices Observation: There was no temperature measuring device located in the glass front refrigerator.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Sewage - Other Liquid Wastes and Rainwater Observation: Condensate was accumulating in the freezer.
Correction: Condensate should evaporate or drain. Fix freezer so that condensate will evaporate or drain properly.
Mops - Drying Mops Observation: Mops not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
