Observation: Need to remove wood dolly that is used to store chemicals.
Correction: Discontinue use of wood or wood wicker for this purpose. All food contact surfaces must be smooth, durable, and nonabsorbent, to prevent deterioration and to maintain an easily cleanable surface. Wood, if used, shall be hard maple or an equivalently hard, close-grained wood.

Discussed employee health policy (materials provided), stock rotation temperature maintenance logs, manager certification and limited access to the kitchen area by other school personnel.

Correction: Please verify that the steam kettle spout is thoroughly cleaned and sanitized- each time the unit is used. Wash, rinse and santize after each use. Meat slice observed w/ some accumulated food particles.

Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
