Today I conducted a routine inspection and discussed the following with the certified food manager: Facility uses a licensed catering company for delivery of food daily between 10:30-11:00am and food is immediately portioned and served to the children. Food temperatures are recorded on the menus daily and any equipment/utensils used for the service of the food to the children are single service use items. The food manager chooses to use the dish machine to wash the equipment and utensils provided by the catering company and then sanitize them in the one vat sink using bleach water at a concentration of 50-200ppm. Test kit is provided. However all equipment and utensils are properly washed, rinsed and sanitized at the catering facility. 1. Management should reiterate the 5 major risk factors associated with foodborne illness with all staff frequently: Employee health policy, Personal hygiene, Contaminated equipment/utensils, Time/Temperature relationships for food and Unapproved food sources. 2. Management should be calibrating all food thermometers at least once a week in an ice water bath to 32f to ensure accuracy when taking food temperatures. The ice water bath is a cup completely filled with ice and some cold water. The thermometers should be washed, rinsed and sanitized before and after each use. The purpose of this visit was to conduct a routine inspection. Bleach sanitizer was observed at 100 ppm. Discussed sanitizing practices with person in charge. Person in charge indicated that machine is used to wash and rinse. Items are sanitized afterwards in a sanitizer bath and set to air dry. Food received from School-house Grill. Facilities maintain temperature logs. Note: Per CFM,quesadillas were received at 10 AM, at 140F. All ages are served by noon.
