May wish to consider Time as a public health control for food used during rush times to avoid "fanning" of food items in the Reach In cold holding unit. Good Cooking temps observed.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: American Cheese stored on table top at 57*F cold holding at improper temperatures
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. May wish to consider Time as a Public Health Control. Procedure Provided.
  • Light Bulbs Protective Shielding
    Observation: Heat Lamp Bulbs are not shatter-resistant.
    Correction: Replace Heat lamp bulbs with a coated or shatter-resistant bulb.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Concentration of wiping cloth sanitizer too strong being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940
    Correction: Utilize only proper sanitizer concentrations that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces

  • Critical: Hands - When to Wash* (corrected on site)
    Observation: A food employee failed to wash his or her hands after handling raw egg and before performing other food handling activities.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

All food items cooked well done. Operation in good shape at time of inspection. All Food Employees shall were adequate hair restraints.
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food
  • Cooling, Heating, and Holding Capacities
    Observation: Reach-in Cold holding unit was overstocked with bread items inhibiting air circulation.
    Correction: Provide additional Storage area for bread to allow cold holding necessary to maintain food items at 41 Degrees F or below. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.
