NOTE: Good job thawing under refrigeration. Good job labeling spray bottle holding chemicals to allow for easily identification. Good job with all employees wearing proper hair restraints. Please ensure all cold holding units have an accurate, visible thermometer present in the warmest part - usually near the door. Left and explained poster on washing hands and handling clean/sanitized dishware.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue and/or other debris on the following nonfood-food contact surfaces: sides of equipment, around the fryer, around the pizza prep cooler, on surfaces around the hot holding prep line.
    Correction: Maintain nonfood-contact surfaces of equipment clean. Create a cleaning schedule to ensure all areas are cleaned several times each week to prevent the accumulation of old food particles, dust, etc.

Observed good food preparation and handling practices on food line prior to notice of inspection - proper use and change of gloves while preparing portioned foods. All foods from approved sources. Discussed food handling and processing from point of receipt to service or discard. Discussed cooling and reheating of ground beef - store policy and procedure in detail - process is satisfactory with control points to validate appropriate temperature attainment. Discussed VDH employee health policy as it relates to the employee with symptoms and exclusion when necessary. Facility appeared clean and well managed.

    Observation: 3 unlabeled bulk containers with dry food ingredients and one liquid dispensing container present.
    Correction: Provide labeling of bulk food containers with common name when not in original labeled container.
