Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Raw ground beef and cooked ready to eat ham thawing in the same sink compartment together.
Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
- Sewage - Other Liquid Wastes and Rainwater
Observation: A condensate drain line was dripping onto food products in the walk in freezer.
Correction: Repair the condensate drain line to prevent incidental contact with foods. Move all foods out from underneath the leak and repair within 30 days.

- Nonfood Contact Surfaces
Observation: The nonfood contact surface of the dishwasher is not designed or constructed to be easily cleanable. Two food trays are screwed onto the side of the machine to function as a splash guard.
Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Replace the trays with a smooth and easily cleanable surface such as stainless steel.
- Equipment - Good Repair and Proper Adjustment
Observation: The steamer and the tilt skillet were observed in a state of disrepair and damaged. The steamer is discharging water onto the floor when in use. The tilt skillet cannot be moved into the cooking position.
Correction: Repair the steamer and the tilt skillet to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Replace splash guard on dishwasher with a metal or other easily cleanable material. Facility was very clean.

Observation: Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin.
Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.
