Make sure to keep boxes in the storage room closed to prevent debris from contaminating single service items. Make sure to keep single service items wrapped and protected from contamination. A cleaning log is needed for the cutting boards and knives on the front line. Cannot exceed 4 hours between cleaning.

Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
Handwashing - Using a Handwashing Lavatory - No Other Purpose Observation: The handwash stations on the front line and in the kitchen are being used for purposes other than washing hands.
Correction: The handwash facility identified above is to be used for washing hands only

Routine
New MT back kitchen area 40F Work top RIC back kitchen area is not in use . Keep cups at front line in an approved dispenser or in plastic sleeves. Cover the clean slicer with food film, food grade can liners or a plastic commercial cover. New kitchen construction looks great.
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site) Observation: The ready-to-eat (RTE) commercially processed pulled pork in the refrigeration unit was not properly dated for disposition after opening. Food product was not in the manufactures container nor did the new container have dates.
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Product was discarded during inspection.

Follow-up
No violations were observed. Facility was not in operation at the time of inspection. Detergent alarm to be installed on dish machine before opening. No violation noted during this evaluation.

Correction required prior to opening. #1 Re-install ceiling panels in store room. #2 Install soap and hand towel dispenser at the new hand sink. #3 Hand wash signage at the new handsink is needed. #4 Security for reminder of building for patron bathroom access. Addition door to be installed and keep event center access door locked. Reminder permit fee and Building Dept approval are required prior to operating permit being issued. No violation noted during this evaluation.
