  • Warewashing - Mechanical Warewashing Equipment, Wash Solution Temperature
    Observation: The hot water from the sink is 134.3 degrees Fahrenheit. The thermometer at the hot water tank reads 128 degrees Fahrenheit. The gauge on the dishwasher for the wash temperature reads 120 degrees Fahrenheit. The minimum wash temperature listed on the placard for the dishwasher is 160 degrees Fahrenheit. The observed temperature of the thermometer on a tray was 155.6 degrees Fahrenheit. It appears that the incoming water from the hot water heater is too low to sanitize the trays and utensils.
    Correction: Discontinue use of the machine and use your 3-vat sink to wash, rinse, and sanitize or use paper trays.

I spoke the manager on 2/20/14 and she stated maintenance was adding coolant to the system to correct the problem.

    Observation: The milk is 46.5 degrees Fahrenheit and the yogurt 47.5 degrees Fahreneheit in the walk-in cooler.
    Correction: Remove the milk and yogurt from the walk-in cooler and place in the other refrigeration maintaining 41 degrees Fahrenheit or less.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The walk-in cooler is 48.0 degrees Fahrenheit.
    Correction: Repair the walk-in cooler to maintain 41 degrees Fahrenheit or less.
