Establishment with an adequate metal food stem thermometer & quaternary test kit. The sanitizer spray bottles had and adequate quaternary concentration when tested. The dish machine reached an adequate hot sanitizing temperature. Adequate employee health policy in place. Health permit posted & visible.

    Observation: Sliced ham and turkey should have been discarded on 03/26/2015. Ready-to-eat foods cannot be held longer than seven days.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
